This is one of the most delicious Parboiled Rice Recipe you will cook. Thattai is one of the most famous traditional snacks in south India. This spicy crispy cracker is a great home snack and can be prepared easily at home. The base ingredient of this recipe is Pulungal arisi ( Parboiled Rice ) and it’s rich in taste and nutritious. Parboiled rice is highly beneficial in lowering blood glucose level and it’s considered as healthy as brown rice. Rich in fiber, calcium, and mineral, its the healthiest snack to munch on. Here is the simple recipe to make delicious parboiled rice thattai.
Ingredients:
- Pulungal Arisi (Parboiled Rice) – 2 cups
- Fried Gram – 1/4 cup
- Channa Dhal – 1/2 tbsp
- Grated Coconut – 1/4 cup
- Chilli powder – 1 tsp
- Butter – 1 tbsp
- Ghee – 3 tbsp
- Asafoetida 1/2 tsp
- Curry Leaves
- Salt
Method :
- Wash and rinse the parboiled rice thoroughly, discard the water and Soak them in water for about 3 hours. Soak the channa dhal for 30 mins separately.
- Drain water from the soaked rice, add in the grated coconuts, and grind it in the mixer or wet grinder. Grind it thoroughly into a fine paste with very little water and transfer them into a bowl.
- Powder 1/4 of fried grams finely in a mixer and sieve them to get a desired fine powder.
- Add the powder into the bowl, along with the rice dough.
- Add the butter, chili powder, salt, asafoetida, soaked channa dal, and curry leaves.
- Mix all the ingredients well and make a stiff dough.
- Now the dough ready and its time to make Thattai.
- Make a small ball out of the dough and place them on a wet cloth.
- Use a banana leaf, grease them with some ghee and place the dough ball on the leaf and flatten them.
- Heat oil in a heavy bottom Kadai and drop the thattai in hot oil.
- Fry it in a Medium flame until it becomes golden brown.
